Low Carb Chocolate Brownies
Low carb brownies recipe using stevia and ground almonds.
Ingredients
- 110g (4oz/1 cup)almond flour/ground almonds
- 1/2 tsp (0.08 fl oz/2.5ml) bicarbonate of soda/baking soda
- 1/2 tsp salt
- 187g (1/2 + 1/3 cup = 6.6oz) stevia - Steviva Blend
- 100g (4oz/1 stick) butter
- 100g (3.5oz) chocolate - 85% cocoa content or greater
- 100 ml (3 3/8 fl oz) cream
- 2 tsp (1/3 fl oz/10ml) vanilla extract
- 4 eggs
- 200g (7 1/16 oz) cream cheese
Instructions
- Mix dry ingredients together, including 113g/1/2 cup stevia (we recommend Steviva Blend ). Melt chocolate and butter, add remaining stevia and cream and allow to cool. Whisk eggs with the vanilla and then add slowly to melted chocolate. Mix together dry ingredients and chocolate.
- Add 1/2 the mixture into a baking tray. Add the cream cheese in slices/spreading to cover the top, then top with remaining mixture. In a pre-heated 180°C/355°F oven cook for 20 mins (check after 15 mins as you wouldn't want the cake to dry out). Allow to cool. Turn out and cut into small squares.
